The anthropometric z-scores for children are already calculated for you in the dataset. The variable definitions can be found here:

Search for the "HW" variables in that document. Variable HW5, for instance, is child height-for-age z-score. There are also maternal anthropometric measurements.

You can also use the age of the child (HW1), gender (B4) and height in centimeters (HW3) and the Stata program "zscore06" which you can find online or directly through Stata. There are other programs that take the age, gender, and height/weight variables and calculate z-scores for you, at least one for every major stats program, and many are available for free on the web.
