Following is a response from DHS Research & Data Analysis Director, Tom Pullum:

hv106 and hv109 are categorical. They are similar, but hv109 has more detail than hv106. hv107 does not include all respondents, but hv108 does. So if you are looking for a categorical variable, hv109 would be best, and if you are looking for a numerical variable, I would recommend hv108.
