Note that the documentation at IPUMS DHS makes it easy to answer this type of question. If you navigate to the variables that interest you, each variable name is a hot link. (You can switch between the IPUMS and original DHS variable names by clicking a button at the top of the page). Click on the link and it will show you a series of tabs.
For the education variables, the DESCRIPTION, COMPARABILITY, and SURVEY TEXT tabs are especially useful. One thing I like about the IPUMS documentation is that, when variables are constructed by ICF, there are links in the documentation to the underlying variables. IPUMS documentation also provides links to closely related variables.
