Hi I was hoping to gain insight on what variables i can use to analyse and control for caste. Since, the closest i came to finding something in NHFS-5 is the ethnicity variable however, that does not give a break-up on the basis of caste. Moreover, is there any other variable apart from V190 and V191 that measures wealth/income of individual/household? any measure of poverty, etc.?

The NFHS-5 data sets don't have an exact caste. NFHS-5 data sets do not have any variables that gives the exact caste of each woman, man, or the head of household. The only caste variables show whether the individual or household head is from a scheduled caste, a scheduled tribe, an other backward caste, other, or don't know. NFHS-5 does not have any information on individual or household income. The wealth variable is only for the household, not for individuals in the household.
