I am working on contraceptive discontinuation rate from 2000 to 2016 in Ethiopia

Contraceptive discontinuation rate was included in all waves of Ethiopian DHS reports.

But, I couldn't find the variable v359 and v360 in the Ethiopian DHS 2000 and 2011 dataset.

Can you assist me how can I get the these variables?

No contraceptive discontinuation was collected in 2000, and in fact the calendar was not used in this survey.

For the 2011 survey, the calendar is included, and V359 could be constructed from the calendar data I'm not sure why it wasn't. However, the reason for discontinuation was not collected in the calendar in the 2000 survey, so V360 cannot be constructed. You can refer to the Contraceptive Calendar Tutorial to see how to work with the calendar data. Example 3 can give ideas on how to approach it.
