I can see that on your DHS household level data (HR) set for Peru you include a set of variables to identify if there's a woman who's benefitiary of the conditional cash transfer program "Juntos". However, these set of variables goes from sh07b_01 to sh07b_21 and I cannot find anywhere the data dictionary for these 21 variables, i.e. I don't understand what is the difference between all of these 21 variables. Where can I find this information?

This is a multiple occurring variable, so each occurrence of every such variable must have its own name because statistical packages do not generally support the use of arrays or subscripts. You might want to use the household member file (PR) which will have just "SH07B" for each observation, because in that dataset, the unit of analysis (case) is the household member.
